Update build docs, especially regarding nix #1631

This pull request updates the build docs to more closely match new changes.

Looks like VSCode decided to reformat some stuff. I don't think the formatting is incorrect, but let me know if I need to undo that.

I believe the repo uses markdownlint, so whether or not you need to change it depends on what you used, but it is odd that your editor decided to reformat it differently.

I've fixed any markdownlint issues I introduced, now.

For Nix I think it would be wise to show a example of how to do a override to get a specific feature for example as well.
